Happy Tuesday (almost said Monday because the long weekend is throwing me off)! I hope everyone had a fabulous Memorial Day Weekend and had the opportunity to thank our vets and military men and women for all of their service! I had a very relaxing yet fun Memorial Day Weekend. The weather unfortunately was not that great (so sad) but I was able to enjoy some fun rooftop action on Friday and Saturday night. On Sunday and Monday I had a very relaxing day. I attended a Pure Barre class (i have become addicted), did some grocery shopping and of course spent hours on Pinterest. I have been spending a ton of time on Pinterest (be sure to follow me) lately because I have been trying to make some yummy and healthy recipes for lunch and dinner. I find it pretty difficult planning meals for the entire week on Sunday so I really rely on Pinterest for their great food / recipes section! Here are the recipes I have found lately and have tried. This broccoli slaw dish is AMAZING. I have made it many times for lunch. Very simple and delicious.
Brussel Sprouts, Cranberry and Quinoa salad. So simple! One thing I would change for next time is cooking the brussel sprouts a little bit before throwing in the salad. I found it a little too chewy. Overall, it was AMAZING.
